Yum! I have been making this dish way too many nights lately. It is so yums and the kids LOVE it. It is super easy and quick in my instant pot which is perfect for me. And it makes great comfort food during the cold fronts we have been getting in Florida. Yes, we were cold, in the 40’s hehe. I know, maybe summer for some parts but we were freezing.
Anyhoo, gather up these ingredients, fire up the instant pot and dig in.
Ingredients 1lb Ground Beef 2 Tablespoons olive oil 1 medium onion, chopped (optional) 1 can corn 1 can pinto beans 1 can Kidney beans 2 can diced tomatoes (I used the roasted kind from Aldi for more flavor) 1/2 packet dry ranch seasoning mix 1 packets taco seasoning 2 1/2 cups beef broth Directions Set instant pot to sauté and add olive oil and onions. Brown ground beef until fully cooked, drain excess fat. (I season with salt pepper, cumin and chili powder to build flavor) To beef, add corn, beans, diced tomatoes, Beef broth ranch seasoning and taco seasoning. Stir to combine. Place the lid on and set the valve to “Sealed” Press pressure button and set to 20 minutes. Once done, do a quick release
Serve soup with your choice of toppings. We usually do shredded cheddar cheese, avocado, sour cream and Fritos. So y ummy. Give this a try. Even my picky eater gobbled it up.
You can sub the beef for turkey or chicken if you prefer.
